Instructions

1. Heat oil in a large pan, on medium heat. Add onions and fry till they turn golden brown.

2. Add ginger and garlic and cook for a minute till the raw smell disappears. Stir continuously.

3. Tip in the tomato puree, garam masala, cumin, and salt. Mix for a minute. The spices will turn fragrant.

4. Add some water when the curry thickens.

5. Add coconut cream and chicken stock, simmer in low heat for 5-7 minutes.

6. After the mixture thickens, add the chicken and allow it to cook at low temperature for about 10-15 minutes.

7. Stir in the spinach till it wilts.

8. Turn off the flame and top with fresh cilantro.

9. Allow to cool completely and transfer into an airtight container. Freeze for up to one week.

10. To use, remove from the freezer and allow to thaw. Microwave for 5 minutes or boil to bubbling.
